Sue Ellen (Pennington) Lyons, 81, of Minford passed away Sunday, August 2, 2026 at her home. She was born September 27, 1944 in Baltimore, MD, daughter of the late Samuel Logan and Garnet Lucille (Cooper) Pennington. Sue was a 1962 graduate of Allendale Fairfax High School in South Carolina, and was a member of Cornerstone Nazarene Church. She owned and operated Bakery Creations in New Boston, a testament to her creativity, and commitment to serving her community. Through Bakery Creations, Sue not only brought delicious treats to countless customers, but also created a welcoming atmosphere that fostered lasting connections with patrons and friends alike. Her life reflected a quiet strength, a gentle kindness, and a devotion to the values she held dear. Those who knew Sue would describe her as generous, welcoming, and steadfast—someone who could always be counted on for a comforting word or an open door.

She is survived by one son, Ronald (Tammy) Lyons; four daughters, Sharilyn (Jay) Miller, Mary (Bo) Elliott, Cynthia (Ken) Mingus, Jennifer (Hector) Reffit; grandchildren, Corey (Chelsea) Lyons, Becky (Josiah) Harrison, Caleb (Chelsey) Lyons, Lacy (Justin) Tillman, Jake (Breeanna) Zumwalt, Justin (Kelly) Frederick, Darae (Aaron) Jett, Brittany (Luke) Emnett, Heather (Chris) Willard, Craig (Marisa) Miller, Lisa Elliott, Amanda (Chris) McCollum, Dustin (Meagan) Roth, Joseph Roth, Ben Mingus, Alysha Lyons-Wilson, Kaitlin Mingus, Larissa Clifford, Trevor Mingus, Seth (Jamie) Hall, Tate (Makayla) Hall, Wyatt (Becca) Mingus, Cody Price, Eli (Autumn) Reffit, Tori (Austin) May, Bella (Levi) Martin; 57 great grandchildren; several great great grandchildren; one sister, Linda Ann Martin; one brother, Samuel Raymond (Vera) Pennington; caretaker/best friend, Danielle DeVinny, and several nieces and nephews.

In addition to her parents, she was preceded in death by her husband of 52 years, Ronald Gene Lyons on February 19, 2014; one grandson, Kevin Elliott; one sister, Carolyn Wiggins, and her step mother, Charity Sparks Pennington.

Sue Ellen Lyons will be dearly remembered and deeply missed. Her legacy endures in the memories she leaves behind and in the many lives brightened by her presence.

Funeral services will be conducted at 1:00 p.m. Saturday, August 8, 2026 at Erwin-Dodson-Allen Funeral Home in Minford with Hector Reffit officiating. Burial will be at Green Cemetery.
